Brown Butter Cookies

Brown butter, dark chocolate pools, flaky salt on top. The cookies from the marble-counter photos, finally written down.

Hutch

Browning the butter is the entire upgrade. It takes five minutes and turns a good cookie into the kind people ask about — nutty, toffee-deep, with edges that shatter and centers that stay soft if you pull them at the right moment. The right moment is earlier than you think.

Chop the chocolate by hand instead of using chips. The shards melt into layers and the chunks make pools, and a cookie with both is doing more than a cookie with either.

Instructions

  1. 1 Brown the butter in a light-colored pan, swirling, until it foams, smells nutty, and the milk solids turn amber. Pour it into a bowl — every brown bit included — and let it cool 15 minutes.
  2. 2 Whisk both sugars into the butter, then the eggs and vanilla, until the mixture looks glossy and slightly thickened.
  3. 3 Fold in the flour, baking soda, and fine salt until just combined, then the chocolate. Rest the dough at least 30 minutes; overnight is better.
  4. 4 Scoop into balls (about 50g each) and bake at 350°F (180°C) for 10–12 minutes, until the edges are set and the centers still look a touch underdone.
  5. 5 Flaky salt immediately, while they're hot. Cool on the tray — they finish setting as they sit, and a warm center is the whole point.
Store & Reheat
Dough balls freeze beautifully for up to 3 months — bake from frozen, adding 2 minutes. Baked cookies keep 3 days in a tin; a 10-second warm-through in a low oven brings the centers back.
