Pepper Steak Salad

The salad that started this blog. Seared pepper steak over bitter greens with a horseradish dressing — and my couscous on the side, always.

Hutch

This is my take on Teri Turner’s Pepper Steak Salad with Creamy Horseradish Dressing, from No Crumbs Left — her skeleton, and then a few years of my own drift: grilled artichoke hearts where she uses hearts of palm, snap peas and celery for crunch, no marinated red onions, and a bowl of lemon-parsley Israeli couscous on the side that I now can’t imagine the salad without.

I first made her version in 2021 and have been quietly editing it ever since, which is really the whole idea of this blog: cook a thing, notice what you’d change, write the change down before you forget it. The dressing proportions have drifted the most — I tried Greek yogurt and whipped cottage cheese versions along the way, and neither was as good as the sour cream original. Some edits are improvements. Some are just edits.

The salad components laid out before building

The one non-negotiable is the rest. Slice a steak too early and the salad gets the juices that belonged in the meat. Ten minutes, unhurried, while the couscous finishes — by the time you’re building bowls, everything lands at once.

Instructions

  1. 1 Season the steak aggressively with salt and cracked pepper and leave it at room temperature for 30 minutes. A pepper crust is the point of this salad.
  2. 2 Whisk the dressing ingredients together and refrigerate. It wants at least 20 minutes for the horseradish to settle in.
  3. 3 Blanch the snap peas in boiling salted water for 60 seconds, then into cold water. They should stay bright and loud.
  4. 4 Sear the steak in the 1 tbsp hot oil, 4–5 minutes a side for medium-rare. Rest it for a full 10 minutes before slicing against the grain.
  5. 5 Cook the couscous in salted water until just tender, drain, and dress warm with the lemon zest and juice, the 2 tbsp olive oil, parsley, and salt.
  6. 6 Build the salad: greens down, then celery, snap peas, and artichoke hearts. Fan the steak over the top and spoon the dressing over generously.
Store & Reheat
The components keep better than the salad: steak, sliced, 3 days in the fridge; dressing a full 5 days in a jar. Build the salad fresh each time — dressed leaves wilt within the hour. Reheat the steak gently or don't: room-temperature steak over fresh leaves is honestly the better lunch.
