Golden Chicken with Lemon Pan Sauce

A completely made-up recipe for layout purposes — the site's layout mannequin. Crisp skin, a pan sauce that takes ninety seconds, and the kind of Tuesday-night cooking that makes a person feel like they have their life together.

Hutch

This is a stand-in story for a made-up recipe, so imagine the usual shape: a short scene-setter about a Tuesday night, a fridge with chicken thighs in it, and strong opinions about pan sauce.

Bread for the sauce, on the marble counter

The method is simple on purpose. Sear hard, don’t touch it, let the pan do the work. While the chicken rests, the sauce happens in the same pan — resting and saucing at the same time is the whole trick of the dish.

Serve it with bread, because the sauce deserves a vehicle and so do you.

Instructions

  1. 1 Pat the chicken dry and season well. Dry skin is the whole game.
  2. 2 Sear skin-side down in hot oil, 7–8 minutes, without moving it. Flip, add garlic and thyme, 3 more minutes.
  3. 3 Rest the chicken on a warm plate. Pour off all but a spoon of fat.
  4. 4 Squeeze in the lemon, add the 60 ml stock, and scrape up the browned bits.
  5. 5 Off the heat, whisk in the 40 g cold butter until glossy. Pour over the chicken.
Store & Reheat
Fridge, airtight, up to 3 days. Reheat in a 325°F (160°C) oven for 12–15 minutes so the skin re-crisps; warm leftover sauce separately and spoon over at the table.
